Place 6–8 mint leaves and 15–20 ml simple syrup in the shaker and gently muddle once or twice to release oils (do not over-bruisе).
Add 60 ml gin and 30 ml fresh lime juice to the shaker.
Fill with ice and shake vigorously for 10–12 seconds.
Double-strain into a chilled coupe for a refined presentation or into an ice-filled highball for a longer serve.
Slap a mint sprig between your palms to wake the aromatics and place it as garnish.
Serve immediately — bright, minty and refreshingly tart.
