Blended Scotch whisky : 45 ml
Fresh lemon juice : 22.5 ml
Honey-ginger syrup : 22.5 ml 1:1 honey:water + grated ginger steeped
Islay single malt : 7.5 ml float
Garnish :Thin lemon wheel or candied ginger (optional)

Prepare honey-ginger syrup ahead by heating equal parts honey and water with grated ginger, then cooling and straining.
Fill a shaker with ice and add 45 ml blended Scotch, 22.5 ml fresh lemon juice and 22.5 ml honey-ginger syrup.
Shake vigorously for 10–12 seconds until well chilled.
Strain over a large ice cube in a rocks glass.
Carefully float 7.5 ml Islay single malt on top (pour over the back of a spoon) for a smoky finish.
Garnish with a thin lemon wheel or a piece of candied ginger and serve — sweet, smoky and bright.
