Lightly chill your flute or coupe while you prepare the cocktail.
In a shaker, combine 45 ml aged rum, 22.5 ml fresh lime juice, 15 ml simple syrup and two dashes of Angostura bitters.
Add ice and shake vigorously for 8–12 seconds until chilled.
Fine-strain into the chilled flute or coupe.
Top with 60–90 ml chilled Champagne or sparkling wine, pouring gently to preserve effervescence.
Slap a mint sprig to release aroma and garnish; serve immediately.
