Amaretto liqueur : 60 ml
Fresh lemon juice : 30 ml
Simple syrup : 10–15 ml optional, for balance
Egg white : null ~20 ml (optional for foam)

Add 60 ml amaretto, 30 ml fresh lemon juice, 10–15 ml simple syrup (if needed) and egg white (if using) to a shaker.
Dry-shake (no ice) vigorously for 12–15 seconds to create a stable foam.
Add ice and shake again for 8–10 seconds to chill and slightly dilute.
Strain into a rocks glass filled with fresh ice (or into a chilled coupe if serving up).
Garnish with a lemon wheel and a cherry or an orange twist.
Serve — nutty, tangy and nicely balanced between sweet and sour.
